A simple but delicious cake recipe:

Mix milk and water together, let yeast melt in it, knead with salt, coriander, flour and oil to a smooth dough. Rest for 45 min. For the filling, cut ham into thin strips. Clean spring onions, cut into rings. Cut mozzarella into small cubes. Mix everything with ricotta, crème fraîche and basil, season with garlic, salt and pepper.

Knead yeast dough briefly on a floured surface, put about a third aside. Roll out remaining dough to the size of a baking sheet. Place on baking sheet, prick dough a few times with a fork. Place the ham leaves on the dough like a roof tile (leave about 2 cm free all around). Spread the filling on top with a tablespoon. Shape remaining dough into rolls of about 10-14 different sizes and lattice the cake diagonally (pressing dough rolls tightly around the edges). Let rise again for about 15 minutes. Brush the lattice and the edge of the dough with beaten egg yolk. Bake lattice cake in heated oven at 180 °C for about 40 min.

Clean lettuces, mix with halved cherry tomatoes in a baking bowl. Mix vinegar, oil, sugar, garlic, salt and a little water to make a dressing. Marinate leaf lettuce with it.

Arrange the ham and lettuce on plates.
